Who said guacamole only had to be made solely with avocados? This vegan-friendly, gluten-free broccoli guacamole from the globally renowned Chiva-Som International Health Resort in Thailand is packed with nutritional goodness without compromising flavour and taste.
Broccoli is an excellent source of protein, fibre, iron, selenium and potassium, along with an array of vitamins. At the same time, avocados contain excellent quantities of magnesium and potassium and are excellent for the heart, vision, digestion and detoxification. Combine all the ingredients together, and you’ve got a winner on your hands. Serve as is, as part of a nutritious breakfast or pair it with a main course.
INGREDIENTS
- 100g Broccoli, roughly chopped
- 30g Tomato cherry (diced)
- 3 leaves Sweet basil (julienne)
- 8g Lime juice
- A pinch of Salt & Pepper
- 20g Red onion (chopped)
- 300g Avocado (mashed)
INSTRUCTIONS
- In hot boiled water, blanch broccoli.
- Then mix all ingredients together, season with lime juice, salt, and pepper, then toss well.
- Keep cool until ready to serve
